Sym's Meatloaf

Classic, comforting meatloaf with beef, pork, and a savory tomato soup glaze.

Ingredients
  • 1 lb ground beef
  • 1 lb ground pork
  • 2 eggs
  • 2 cans tomato soup, divided
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
Instructions
  1. Preheat oven: Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment.
  2. Mix ingredients: In a large bowl, combine ground beef, ground pork, eggs, 1 can tomato soup, Italian seasoning, onion powder, garlic powder, paprika, seasoned salt, and pepper. Mix by hand until tacky and well combined.
  3. Shape loaf: Form mixture into a loaf shape and place in the prepared pan or on the baking sheet.
  4. Top with soup: Spread the second can of tomato soup evenly over the top as a glaze.
  5. Bake: Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and serve: Let rest 5-10 minutes before slicing. Serve warm.
Tips & Notes
  • Mix until tacky for best texture—do not overmix.
  • Letting the meatloaf rest before slicing helps it hold together.
  • Leftovers make great sandwiches!
