Sym's Meatloaf
Classic, comforting meatloaf with beef, pork, and a savory tomato soup glaze.

Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 2 eggs
- 2 cans tomato soup, divided
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp seasoned salt
- 1/2 tsp black pepper
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment.
- Mix ingredients: In a large bowl, combine ground beef, ground pork, eggs, 1 can tomato soup, Italian seasoning, onion powder, garlic powder, paprika, seasoned salt, and pepper. Mix by hand until tacky and well combined.
- Shape loaf: Form mixture into a loaf shape and place in the prepared pan or on the baking sheet.
- Top with soup: Spread the second can of tomato soup evenly over the top as a glaze.
- Bake: Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and serve: Let rest 5-10 minutes before slicing. Serve warm.
Tips & Notes
- Mix until tacky for best texture—do not overmix.
- Letting the meatloaf rest before slicing helps it hold together.
- Leftovers make great sandwiches!
